- Singles outsold doubles 2:1 — opposite of Paradise's 1.2:1 doubles-heavy. Live music "listening" crowd vs DJ "dance" crowd. Expect doubles to swing back up Sat with Lovefingers + Tornado.
- Margaritas were the single biggest cocktail line — 87 sold, $1,218 revenue. Marg/paloma split held at 77/23 — lock the batched volume to that ratio.
- 10pm hit 40% of night's revenue in one hour. Peak rush is the ZDBT→Nick León transition. Sat staffing should mirror this around Lovefingers/Tornado peak.
- Zero cash transactions — 100% card. Validates e-transfer payout flow for staff.
- Hard-bar revenue per cover ($18.50) matches Paradise baseline — on-track first night.

- Doubles came back hard on the dance crowd — 65 Fri → 166 Sat (+155%). Doubles:singles ratio went from 0.50 (Fri live music) to 0.88 (Sat dance B2B). Confirmed the hypothesis.
- Beer LOST share when priced at parity with single highball — 38% Fri → 32% Sat. But lost beer demand migrated to higher-margin doubles + cocktails. Net win for revenue.
- Non-alc DOUBLED in volume — 14 → 32 cans (+128%, per-cover rate +62%). Hotter night, more pacing, bigger sober contingent on dance floor.
- Sustained 200+ drinks/hr for 3 straight hours (8–10pm) — true heaving night. Friday's peak was a single 220-drink hour at 10pm.
- Revenue per cover jumped from $18.50 (Fri) to ~$25.13 (Sat) — partly cover dynamics, mostly price uplift working as intended.
- iPhones barely used — 3 terminals carried 99% of the load. iPhone tills are backup only on a heaving night.

- No margaritas or palomas tonight — prebatched program is done. Bar signage needs the cocktails section removed/covered. Disable marg + paloma SKUs in Square.
- Bartender substitution scripts: "marg?" → tequila + lime + agave highball with salt rim ($11/$17). "Paloma?" → tequila + grapefruit soda + lime ($11/$17).
- Tequila demand UP — cocktail customers mostly substitute to tequila singles/doubles. Watch the Cazadores bottle count.
- Beer + non-alc inventory comfortable — 442 cans beer remaining (need ~300), 74 non-alc remaining (need ~30). No Kyle topup needed.
